Legends of the health benefits of green tea go back thousands of years. Green tea undergoes only minimal oxidation during processing, making it a rich source of antioxidants and other beneficial compounds. Green tea is made from the leaves from Camellia sinensis that have undergone minimal oxidation during processing. Green tea originated in China, but it has become associated with many cultures throughout Asia. Green tea has recently become relatively widespread in the West where black tea has been the traditionally consumed tea.
Green tea has become the raw material for extracts used in various beverages, dietary supplements and cosmetic items. Many varieties of green tea have been created in the countries where it is grown. These varieties can differ substantially due to variable growing conditions, horticulture, production processing, and harvesting time.

Green tea steeping time and temperature varies with different tea. The hottest steeping temperatures are 81 to 87 °C (178 to 189 °F) water and the longest steeping times two to three minutes. The coolest brewing temperatures are 61 to 69 °C (142 to 156 °F) and the shortest times about 30 seconds. In general, lower-quality green teas are steeped hotter and longer, whereas higher-quality teas are steeped cooler and shorter. Steeping green tea too hot or too long will result in a bitter, astringent brew, regardless of the initial quality, because it will result in the release of an excessive amount of tannins. High-quality green teas can be and usually are steeped multiple times; two or three steepings is typical. The steeping technique also plays a very important role in avoiding the tea developing an overcooked taste.

Gunpowder Green – Green tea from the Guangdong province of China. Gunpowder tea, as the name implies, is made up of leaves hand-rolled into tiny pellets. These resemble gunpowder, and give this tea its distinct name. Continuing this bang-bang theme, our special-grade version of this tea is named after a year that saw lots of cannon action. Our “1812 Gunpowder” produces a full-bodied cup with a hint of smokiness. And mixes well with peppermint to produce a popular “Moroccan Mint” tea.
Jasmine Green – Green tea from the Fujian province of China infused with the delicate scent of the night-blooming jasmine flowers. If you enjoy jasmine tea, we urge you to try the sublime taste of its well-made varieties. It melts into a cup of sweet fragrance and delicate jasmine notes.
Kukicha Green – A warm, rounded and playful green tea from Japan. Kukicha is a blend of tea leaves and tea leaf stems. The lightness of the stems translates into the cup as a sweet, white sesame seed or chestnut note. Tender quality to the texture, like soft white rice. Very balanced and, for a Japanese tea, very low in astringency.
Mandarin Green – This Sencha green tea brews a cup with subtle, sweet, ctirus notes. A twist on adding fresh lemon juice to green tea. Mandarin flavoring.
Minted Green – A blend of peppermint, spearmint, gunpowder green tea and Dragonwell green tea. Cooling and invigorating this tea is an all-time favorite.
